Baked pumpkin pancakes

Sometimes parents need a break. Sometimes each human being needs a break. But as I am a parent, I am using the parent card. I love easy and fast breakfasts in general and this is what I usually post about with occasional more complicated one. Yesterday I woke up and I just wanted someone to make me a big juicy breakfast. I was so close to waking up Tomasz, but then I figured that doing so at 5 am on Sunday could finish our 11 year long marriage. A girl has to do what a girl has to do. So I started to imagine pumpkin pancakes. It’s all because I baked a whole pumpkin yesterday and we had some puree left in our fridge. To make the dough is easy, you just place all the ingredients in a bowl and mix. But then you need to fry them and stand next to a pan and flip. I just wanted to sit and do nothing, at least till Mia wakes up. I’ve decided to make baked pancakes. It could work or not, but if it does, I could use it in the future. It did work out! After 20 minutes of sitting next to an oven and reading a book, I had delicious pancakes. I cut out round shapes, but obviously ate everything else as well. It was early and it was Sunday, so I did not pay much attention, but after I had them, I figured, that I could cut out any shape I want like all the funny cookie shapes I have 😀 Next time then.

You will need (for 2):

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tbsp honey
  • pinch of salt
  • ½ cup pumpkin puree
  • ¾ cup milk
  • 2 eggs
  • 2 tbsp olive oil
  • ½ tsp pumpkin spices

Heat your oven to 220*C.

Place all the ingredients in a bowl and mix. This is how I usually do it. I used to mix wet from dry separately, but now I do it all together.

Place baking paper in a baking form (I used 20x30cm, but a bit smaller or bigger will be ok as well). Bake in 220*C for 15-20 minutes (depends on your oven), until it gets nicely brownish. The dough will grow and it may look like a ball, but it will flatten, so don’t worry.
